Another wonderful adventure through the Black Series, with the next release of the ‘Fox Force Five’. A barrel selection of the five best barrels from the five best vineyards in 2016. We had such a great response from our members and customers with this wine and it’s a lot of fun for us to, in getting the combination of barrels just so! A pure winemakers fantasy in making the most of our fruit and our vineyards from 2016, and showing the versatility of Shiraz to be interesting yet stylish and elegant, but packs a punch in terms of flavour too. This wine is 100% Hunter Valley Shiraz, comprised of fruit from five Shiraz vineyards in 2016, and then aged in French barrels made from oak of five different forests. What a delight.
The challenge all comes from the blending of the batches, rather than employing any different processing measures. All batches were treated the same with extended cold soak of the fruit, followed by time in oak, which is where the magic happens. After a period of time in oak, we selected barrels from each batch that look seamless together to create this beautiful wine. Normally an oak barrel is made from one forest, so the fact that one of our preferred coopers was able to come through on our request to have barrels made from 5 different forests, and has turned this wine into a delightful spicy beauty. The reds from 2016 are powerful in weight, colour and flavour. This FFF has melded beautifully in its flavour profile showing spice and floral notes, cherry and vanillin. Its medium bodied on the palate and very savoury, a perfect foodie wine with the silky tannins and ripeness of the fruit a perfect match.
FFF is drinking well with spicy king prawns and parppadelle.
A beautiful food wine to be drunk with joy now, but we expect it will cellar for the medium term.
